Ingredients:
- Strawberry Puree : 2/3 cup ( approximately 6-8 strawberry)
- All purpose flour: 1 1/2 cup
- Whole milk: 1/4th cup
- Butter : 1/2 cup( 1 stick)
- 1 large egg
- 2 large egg whites
- Pure Vanilla Extract : 1 tsp
- Baking soda : 1/2 tsp
- Baking Powder : 1 tsp
- Sugar: 1 cup
- Salt : 1/4th tsp
- Preheat oven at 350F.Line in 12 -cup muffin pan with cup cake liners.
- Puree 6-8 strawberries in a food processor.
- Mix together flour, soda, baking powder, salt and sift it.
- In a small bowl mix milk, vanilla extract, strawberry puree and keep aside.
- In another bowl soften the butter .I have used hand blender to do it. Once it is fluffy, add sugar and give a quick mix.Then add egg and egg whites one after the other and give a quick mix.
- Now add half of flour mix and give a mix.Add milk mixture .Mix until it is just blended.Then add remaining flour and mix well.
- Divide the batter evenly among lined muffin cups. Bake for 15-20 min or until skewer comes out clean.
