Eggless Fruit and Nut Cake

An easy and yummy cake which is nutritious....

Ingredients:

Maida/all purpose floor : ½ cup + 6 tb spoons
Sugar : ½ cup·
Cinnamon powder – 1/4th tsp
Nutmeg powder- 1/4th tsp
Baking soda – ½ tsp
Salt : 1/4th tsp
Butter – ½ stick (1/4th cup)
Vanilla Extract : ½ tsp
Water : 1cup
Raisins + cranberries+ Apricots(dried and chopped) – half cup
Almonds+Cashews+Walnuts+ Pecans(chopped) – ½ cup

Procedure:

1. In a sauce pan add 1 cup water and add chopped raisins ,cranberries ,apricots.Cover the pan and cook them on medium heat for 10 min.

2. In a mixing bowl, add maida, cinnamon powder, sugar,nutmeg powder, salt, baking powder and vanilla extract.Mix it well.

3. Now pour water with cooked dry fruits into a large mixing bowl. Add ½ stick butter and let it melt.

4. Now add mixed dry ingredients(floor mix) into the same bowl and mix slowly. Add chopped dry nuts and a give a nice mix.

Preheat oven to 350 degrees.

5. Grease cake pan, and toss in the mixture and level it equally.

6. Keep in the oven for 30-45 min until it is completely done.Insert a toothpick in the center and check whether it is coming out clean(then it is fully cooked).

7. Take the cake pan out of oven and cool it for 30 min and flip out onto a plate or cooling rack.

Note: Use dried nuts and fruits in any ratio, like raisins more, cranberries less.Do your own combination.
