Kobbari kova laddu

Kobbari kova laddu is one of the famous sweets in Andhra.But here in US, tough to get these type of sweets.So i was searching for the recipe to prepare at home,finally found the one in one of the blog..here goes the recipe

Ingredients:

For coconut stuffing
  • Grated coconut : 1 cup(fresh or frozen)
  • Powdered jaggery: 3/4th cup( adjust as per your taste)
  • Elachi powder : 1/2 tsp
  • Ghee: 2 tb sp
Procedure:
  • In a pan add ghee and fry coconut till it turns to light brown in color.
  • Take that into a bowl.In same pan add jaggery,and 1 spn of water and let jaggery melt completely.
  • Now add fried coconut,ilachi powder and mix well till it becomes thick and comes together.It takes approximately 10 min.Let it cool for some time, but not completely and start making laddu by applying little ghee to hands and keep them aside.
For kova(top layer)
  • Milk powder: 1 cup
  • Butter: 1/2 stick
  • Condensed milk: 1/2 can(7 oz)
Procedure:
  • In a microwave safe bowl, add butter and let it melt.Add milk powder and condensed milk and give a nice mix.Microwave it for 1 min, mix well and microwave for 1 more minute.At this point check the consistency, it it still needs to be cooked, microwave for more 10 seconds and check.(mine was done in 2min 20secs)If it is cooked more it becomes powder, so keep an eye.Once it is done, let it cool for few secs.
To make laddus:

Apply ghee to the hands and take a small portion of kova and flatten it into a small circle.Take coconut laddu onto the kova and cover coconut laddu completely and give a smooth shape by rolling between the palms.

Sweet and sour soup

I tasted this soup at my friend's place.Really like the taste...Asked her about the recipe and here is the recipe
Ingredients:
  • Beans : 6 
  • Carrot: 1
  • Cabbage : 30gm
  • Spring onion : 2
  • Sweet corn : 1/3 cup
  • Ginger : 1 teaspoon(finely chopped)
  • Knor Veg broth cube: 1
  • Water: 500ml
  • Soy sauce: 1 tb spoon
  • Sri racha hot sauce : 1tb sp
  • Sesame oil : 4 tb spoons
  • White vinegar distilled : 1 tb sp
  • Corn starch : 2 tb sp
  • Salt
  • Pepper powder
Procedure:
  • Chop all vegetables finely.In a sauce pan heat water.Add all ingredients except pepper, oil,corn starch .Let it boil till the foam is formed.
  • Add oil and let it boil for 12-15 min till vegetables are cooked.
  • Mix corn starch with little water and to the boiling soup and mix well. Add enough salt.Still continuously till desired consistency is reached.
  • Add enough pepper powder and take off from heat.
  • Garnish with spring onion and serve hot

Strawberry muffins


Adopted this recipe from Martha Stewart's website. My 2 yrs old love these muffins.
Ingredients:
  • Strawberry Puree : 2/3 cup ( approximately 6-8 strawberry)
  • All purpose flour: 1 1/2 cup
  • Whole milk: 1/4th cup
  • Butter : 1/2 cup( 1 stick)
  • 1 large egg
  • 2 large egg whites
  • Pure Vanilla Extract : 1 tsp
  • Baking soda : 1/2 tsp
  • Baking Powder : 1 tsp
  • Sugar: 1 cup
  • Salt : 1/4th tsp
Procedure:
  • Preheat oven at 350F.Line in 12 -cup muffin pan with cup cake liners.
  • Puree 6-8 strawberries in a food processor.
  • Mix together flour, soda, baking powder, salt and sift it.
  • In a small bowl mix milk, vanilla extract, strawberry puree and keep aside.
  • In another bowl soften the butter .I have used hand blender to do it. Once it is fluffy, add sugar and give a quick mix.Then add egg and egg whites one after the other and give a quick mix.
  • Now add half of flour mix and give a mix.Add milk mixture .Mix until it is just blended.Then add remaining flour and mix well.
  • Divide the batter evenly among lined muffin cups. Bake for 15-20 min or until skewer comes out clean.
Cool them and enjoy!!!!

Jalapeno Cheese Muffins

INGREDIENTS:
·         All purpose flour\Maida : 1 cup

·         Sugar: 1/2 tablespoon

·         Baking powder : 1/2tablespoon

·         Baking soda : 1/4th teaspoon

·         Salt: 1/4th teaspoon

·         Unsalted butter : 1/4th cup(melted)

·         Yogurt : 1/2 cup

·         Egg: 1

·         Minced onion: 1 tablespoon

·         Chopped Jalapeno pepper :1(or more as per spicelevel)

·         Grated Cheddar Cheese : 1/2 cup
Procedure:
·         Mix together maida, sugar, baking powder,baking soda, chopped onion thoroughly. Add cheddar cheese and give a quick mix.

·         In another bowl,add beaten egg, melted butter, yogurt,chopped green chilies and mix well.

·         Slowly add egg mixture to dry ingredients and mix together.

·         Line in muffin pan with baking paper cups, fill the cups with batter.

·         Turn on the oven to 400F.Bake muffins for 15-20 min. 

Cool them and serve.

Ravva Pulihora



    Ingredients:
  • Rice Rava : 1 cup
  • Water: 2 cups
  • Oil
  • Salt
  • Turmeric
  • Groundnuts
  • Cashews
  • Curry leaves
  • All ingredients of Tadaka\popu
  • Green chilies -3
  • hing
  • Lemon Juice
  • Cilantro - 2 strings
Procedure:
  • In a saucepan, boil 2 cups of water.Add 1 spoon oil, enough turmeric, salt and then add rice rava.
  • Mix it well, and cook it on low flame till it is completely done.If required, sprinkle some water in between.
  • Take this to a wide mixing bowl .Slowly prick with fork and see that no lumps are there.Let it cool completely.
  • Now to prepare tadaka add oil in a pan, put ground nuts, cashews, chopped red and green chilies and all ingredients of tadaka,1/4th spoon salt, curry leaves, hing, chopped cilantro.
  • Now mix this tadaka, lemon juice, salt to the cooked rava and mix well.
Leave it for some time.Give a nice mix before serving.

Pesalu Purnalu\Burelu

Pesalu(whole moong dal) Burelu(whole moong Dal stuffed balls) are very nutritious and good for health.

For inside stuffing

Ingredients:
  • Whole moong dal(pesalu) : 1 cup

  • Jaggery/Gur/Bellam : 1cup grated(adjust accourding to your tase)

  • Ilachi powder : 1/2 tb sp
Procedure:
  • Soak whole moong dal in water for 6-8 hrs.After that pressure cook with 2cups of water for 2 visils.

  • Once pressure is gone, drain water from moong dal.In a thick bottom vessel, add cooked moong dal,jaggery ,ilachi powder and mix well.

  • Mix in frequent intrevals till jaggery is melted and mixed with moong dal.

  • Once it is done, leave aside to become cool.
For outside covering:
Ingredients:
  • Urad Dal : 1/2 cup

  • Rice : 1/2 cup

  • Salt : a pinch

  • Sugar : 1T sp

  • Baking soda : a pinch

  • Oil for deep fry
Procedure to prepare purnalu:
  • Soak urad dal and rice for 3-4 hrs.Grind as smooth thick paste.Add salt,sugar,baking soda and mix well.

  • Now in a kadai , take oil for deep fry.Make whole moong dal stuffing into small balls.

  • Once oil is hot, take moong dal ball, and dip it in urad dal batter and put that in hot oil slowly.In similar manner add remaining balls, till kadai is full.

  • Let them fry till they are done fully.Take them to tissue to absorb oil.

Eggless Fruit and Nut Cake

An easy and yummy cake which is nutritious....

Ingredients:

Maida/all purpose floor : ½ cup + 6 tb spoons
Sugar : ½ cup·
Cinnamon powder – 1/4th tsp
Nutmeg powder- 1/4th tsp
Baking soda – ½ tsp
Salt : 1/4th tsp
Butter – ½ stick (1/4th cup)
Vanilla Extract : ½ tsp
Water : 1cup
Raisins + cranberries+ Apricots(dried and chopped) – half cup
Almonds+Cashews+Walnuts+ Pecans(chopped) – ½ cup

Procedure:

1. In a sauce pan add 1 cup water and add chopped raisins ,cranberries ,apricots.Cover the pan and cook them on medium heat for 10 min.

2. In a mixing bowl, add maida, cinnamon powder, sugar,nutmeg powder, salt, baking powder and vanilla extract.Mix it well.

3. Now pour water with cooked dry fruits into a large mixing bowl. Add ½ stick butter and let it melt.

4. Now add mixed dry ingredients(floor mix) into the same bowl and mix slowly. Add chopped dry nuts and a give a nice mix.

Preheat oven to 350 degrees.

5. Grease cake pan, and toss in the mixture and level it equally.

6. Keep in the oven for 30-45 min until it is completely done.Insert a toothpick in the center and check whether it is coming out clean(then it is fully cooked).

7. Take the cake pan out of oven and cool it for 30 min and flip out onto a plate or cooling rack.

Note: Use dried nuts and fruits in any ratio, like raisins more, cranberries less.Do your own combination.

Rice rava upma

Ingredients:
  • Rice rava : 1 cup
  • Moon dal : 6 Tb spoons
  • Green chilies : 2
  • Salt
  • Oil
  • Urad dal : 1 t sp
  • Cumin seeds : 1 t sp
  • Mustard seeds : 1/2 t sp
  • Red chili : 2
  • Curry leaves

Procedure:

  • Soak moon dal for 15 min.In a thick bottom pan, add oil.When it is hot add red chili,urad dal, mustard seeds,cumin seeds, curry leaves and chopped green chili.Let it splutter.
  • Now add 2 cups of water(add more water later if required) and bring it to boil.Add enough salt.Now mix rice rava and soaked moong dal.
  • Let it cook till rava is done.

Serve with tomato pickle or any powder.

Kottimeera, tomato chutney


This is the message you can see about healthy benefits of kottimeera in every social networking sites, so thought of sharing here in my blog.

CLEAN YOUR KIDNEYS IN Rs. 1.00 OR EVEN LESS Years pass by and our kidneys are filtering the blood by removing salt, poison and any unwanted entering our body. With time, the salt accumulates and this needs to undergo cleaning treatments and how are we going to overcome this?
It is very easy, first take a bunch of parsley (MALLI Leaves) KOTHIMBIR (DHANIYA)and wash it clean Then cut it in small pieces and put it in a pot and pour clean water and boil it for ten minutes and let it cool down and then filter it and pour in a clean bottle and keep it inside refrigerator to cool. Drink one glass daily and you will notice all salt and other accumulated poison coming out of your kidney by urination also you will be able to notice the difference which you never felt before.
Parsley is known as best cleaning treatment for kidneys and it is natural! Hope you will forward this to all your loved ones .

Now coming to recipe

Ingredients:
  • Kottimeera or cilantro : 1 bunch
  • Tomato : 2
  • Onion : 1/2
  • Green chilies : 5
  • Tamarind
  • Salt
  • Ginger : 2 inch piece
  • Garlic : 2 pods
  • Oil
  • All ingredients of tadaka or popu

Procedure:

  • Chop cilantro,tomato onion .In a pan add 1tb sp oil, fry chopped cilantro till raw smell disappears.
  • Take that into a bowl.Now in same pan add oil, chopped tomato , onion,green chilies,chopped ginger, garlic and a pinch of salt and let it cook(maggapettadam) till tomato is all done.
  • Let the mixture cool down.In a blender add fried cilantro, salt, tamarind and pulse it for few seconds.Then add tomato mixture and pulse it for another 30 seconds(The pulse option won't make the mixture like paste).
  • In a small pan put tadaka or popu and mix it with chutney.

This chutney goes well with dosa,rice and chpathi.

Note: Ratio of tomato and cilantro and spiciness can be adjusted as per your taste.
